This dish resembles the spring in its full vibrancy and freshness. There is pre-dominance of yellows and greens and this is what makes White Cut chicken such a delight. Hailing from the Siu Mei branch of Cantonese cooking, the chicken pieces are cooked in scalding hot broth or water flavored with scallions, star anise and coarse salt. The outer skin remains lightly yellowed whereas the flesh parts and falls off the bones. Blanched spinach or cabbage leaves in their glazed emerald glory decorate the sides of the yellow mounds. A dish to die for!
